ARCHIVED ARTICLE Today: pancakes, what a hero, sweet or savoury they’re magnificent!!!!!
I’ve been fantasising about sticky toffee puddings after watching a recording of Masterchef last night, but a quick glance in my store cupboard has brought me back down to reality and it’s more a question of what CAN I make with the simplest of ingredients to avoid having to go out and put myself at risk from coronavirus.
My absolute favourite fall-back recipe is one of the simplest in the world; pancakes, but I use a mixture of flours to make both sweet and savoury versions.
For savoury pancakes, use wholemeal flour (integral), or mix with buckwheat flour (harina de trigo sarraceno here in Spain which is usually available in health or eco stores, I get mine in the tienda verde in the Puerto de Mazarrón or Tienda de las Especias in Cartagena).You can even use maize flour for savouries.
For sweet pancakes use ordinary white flour. You can mix with buckwheat or wholemeal and it’s just as good.
My recipe uses olive oil in the mix as it doesn´t stick to the pan so much, and I often use 2 eggs instead of one if the chickens are on form and popping out lots of eggs!
I usually make one mix and we feast on a savoury stuffed pancake followed by a sweet one for pud.
The mixture keeps well in the fridge for a couple of days, just beat with a fork again and off you go. The dogs and the chickens go mad for pancake scraps as well!
Basic mix for four good sized pancakes:
4 oz (125g) flour
1 egg
½ pint (300 ml) of milk
Tablespoon of olive oil
Scrunch of salt and pepper
Method: Chuck everything in a bowl remembering to remove the egg from its shell and beat. Heat non-stick pan (around 30cm for a quarter of the batter) and ladle in about a quarter of the mix, spread around the pan, cook until base is done, flip and then fill with whatever you want.
Few savoury ideas:
Grated cheese, with something else; maybe tomatoes, spring onions, sweetcorn, ham, mushrooms…whatever is in the fridge or store cupboard.
Ditto for spreadable cream cheese.
Beetroot and red kidney beans mixed with fresh mint spread on cream cheese…..that’s a popular one with us.
Ratatouille.
Mix of fried up greens from the garden and young garlic, sometimes with cheese.
Sweet potatoes and chilli, with any beans
Spinach and peas
Sweet fillings:
Jam or lemon curd
Chocolate spread and banana (and added nuts, cream, ice-cream or chocolate chips depending on your storecupboard)
Any tinned or fresh fruit
Ice-cream on its own
Yoghurt mixed with dried fruits and nuts (we often pre-soak dates, raisins, dried apricots etc in tea or an alcoholic drink such as Cointreau, Amaretto, port or Baileys in advance so they’re plump and gorgeous)
And anything else you can find in the cupboard within reason!

What to do if you are in the Region of Murcia and believe you may have contracted the virus
The regional government has set up a special helpline to supply information to members of the public (900 121212), and also urges people to call the 112 emergency services line if they suspect that they may have contracted the virus rather than going straight to hospital or to a medical centre. Medical staff will be sent to your home to test for the virus.
The Region’s public hospitals have limited the number of visitors to just one per patient.
Sensible precautions
The advice being issued to members of the public by medical authorities all over the world coincides on the following points:
- Wash hands frequently with either soap and water or a sanitiser gel
- Catch coughs and sneezes with disposable tissues – and throw the tissues away immediately after use before immediately washing your hands!
- If you don’t have a tissue, use your sleeve – and wash the item of clothing used at the next opportunity
- AVOID touching your eyes, nose and mouth with unwashed hands
- AVOID close contact with people who are unwell
- Don´t panic!
